If that 18th level wizard cast all of the buffs himself, then the DC to beat for all 3 spells would be 29 (DC=11+CL). Greater dispel would remove 3 spells (when cast by a level 15 caster), so on a 29 all 3 would be removed in order of highest to lowest spells (if it mattered).
So, you would need a 14 on the die to remove his spells (15th level caster).
At least that's how I read it.

Sniggevert has it mostly, the only other part is if you have identified the spells in question before you go to counter them you can instead use the save throw of those spells as the DC instead of the caster level.
In which case you'll be facing a DC of 13+(enemy wizard's intelligence modifier) instead of the 29. For a third level spell the DC is almost guaranteed to be lower this way. Maximum int is 36 which means that barring feats the DC will be a 26, even with spell focus and greater spell focus it will be a 28. IF he also has spell perfection for one of those spells (unlikely) then the DC would be a 30 if he also has the appropriate spell focus and greater spell focus.

As long as you know the specific spell(s) you are targeting, then yes. It would work as Abraham mentioned. This is specifically called out in Dispel Magic, but not in Greater. However, I would think it would act the same, and you'd be able to target up to the number of spells that Greater would affect due to your caster level.
