After a successful Pathfinder RPG Beginner Box one-shot, gonna start a campaign. Setting's Land of the Linnorm. Suggestions on PC races and classes? Not too sure, for example, how the paladin fits in the setting or many of the classes from the APG, especially the alchemist, cavalier, and summoner. Same with the halflings. On the other hand, the samurai and ninja from Advanced combat actually fit in the setting.

I can see the alchemist not fitting in, but the cavalier and summoner shouldn't be problems. They would fit in better than paladins and wizards. It is all in the presentation.
The cavalier would fit in very easy. He could be a warrior seeking to slay a linnorm and become a king. The cavalier fits well as a warrior who wants to be a leader. With the could have a horse that would appear more fitting to the area. His mount could be a horse with a heavy coat of hair or an elk.
For the summoner, any person raised in an area influenced by the First World would summon an eidolon shaped to appear as a fey creature. It may even appear to be a twisted form of a linnorm.

It is not impossible for the peoples of the southern lands to travel to the north =).
As far as races goes.
Human(varisia and ulfen seems good selections)
Elves,dwarf,gnome are also part of the region.
I dont think its right for a Dm to restrict classes due to a regional think, however if your players are ok with it go for it.

While a Paladin of Iomedae isn't going to be a common sight in the Land of the Linnorm Kings, a Paladin of Erastil is thoroughly fitting. I can easily see one in the Hagsreach, stalking the woods and protecting small settlements from the incursions of Irrisen.
A Paladin can assuredly work in these realms; their job is just going to be that much harder, their Gods different, and their existence considerably more thankless.
But there's plenty of heroism to be done.

The best way to do this, IMO, is to see what the players want to play and work from there. This is doubly true if they're new players (as I suspect from the beginners box intro). It's very easy to build a strangers in a strange land campaign.
Obviously, fighters, barbarians, rogues, etc. make up the stereotypes for the region, but a displaced Alkenstar gunslinger or Chelaxian demon-binder are equally compelling characters.
The main restrictions are going to come from wat treasures are available, not what characters you have...

I highly suggest picking up Open Design's Northlands book from their Midgard setting to help fill in the fluff that the Linnorm Kings book doesn't discuss.
As for the displaced hero... I'm doing just that in the Legacy of Fire campaign I'm in (for those unfamiliar: it's very Arabian/desert-centric, in the lands of Katapesh) as my character is an Half-Elf fighter, the human part of him (more dominant) is Ulfen. Makes for interesting roleplay so far. I haven't had to do any survival checks yet for heat just yet, but at least he's trained for it :)
