Necklace of missles vs. resist fire question.

For purposes of a resist energy spell, would an entire necklace of missiles detonating at once be considered one large block of fire damage (i.e., all the dice of damage being rolled together, and resistance only then being subtracted from the total) or many smaller blocks (each missile being considered a separate source of damage, and thus possibly being more resistable)?

IMO, it would be separate sources of damage, just like a full attack with iteratives. DR/hardness/resist x would apply to each missile's damage output, not the total damage done.

Do you mean a Necklace of Fireballs?

If it fails its save, then the spheres detonate simultaneously.

Resist Energy works "each time the creature is subjected to such damage."

The spheres come in different strengths, so I would probably have each sphere act as a separate Fireball spell. (If six wizards all cast Fireball simultaneously, I would have them all apply individually also)
