Undead Anatomy, Beast Shape and spells of the like

So, it states that you can take many sizes depending on the spell level.

And when there isn't a creature of said size? There isn't a diminutive Monstrous Humanoid in any of the bestiaries.
So, can you choose say, medusa, and be diminutive, for instance? How does it work exactly?

Methinks it's in there in case they had some. Otherwise it's just consistency.
