Saving Throw: See text

But the text doesn't specify what type of saving throw the cantrip allows if I cast it to colour, clean or soil a creature or magic item. In some instances I could also lift, chill, warm or flavour such a target. Presumably it does allow a save, otherwise the entry would be "None" or "No (harmless)". Any preference?

I'd say Fortitude against color, clean, soil etc, and maybe reflex against lifting.

Scarab Sages

PC in our game used Prestidigitation to continually change another players food to always taste like chicken. Everything tasted like chicken. Since he was targeting the plate of food, an inanimate object, and not the player, no save. That guy hated chicken.

As written it doesn't allow for one. Which I'm fine with since the spell can mostly only be used to add non mechanical flavor anyway.
