Among the level 2 summons is a horse. Is this a normal horse, with the docile quality? Or wartrained? I ask because horses serve really two purposes in Pathfinder, mount or combat, and since this spell will only function at most for 2 minutes at 20th level, it being a mount is obviously out of the question.

You always get what is in the bestiary. IIRC the one in the bestiary is docile.

Summons automatically attack the closest target, though, which would override docile.
Heh. I think you are mixing the English definition of docile and the game term docile. The summoned horse would still have the docile quality and thus its hoof attacks would still be secondary despite having no other attacks.

Maezer has it. Docile horse that attacks your enemy (unless you direct otherwise).
Note that although it doesn't last very long, summoning a horse as a mount still has some utility value. Think of it like expeditious retreat Druid style.
Yeah, you're only getting the horse for a few rounds... but then again I did summon a dolphin once to ride it across a narrow river.
