The Pathfinder Core Rule Book states (p182)
An unarmed character can't take attacks of opportunity.
And earlier it says (p180)
If you're unarmed, you don't normally threaten any squares and thus can't make attacks of opportunity.
So my question is, does this only apply to player characters? Or does it also affect NPC's and/or Monsters? Obviously creatures with natural weapons would still threaten and get attacks of opportunity, but what about an unarmed Goblin, Ogre, Hill Giant, etc?
If a player character disarms a creature who normally has a weapon (i.e. Ogre Mage, Hill Giant, Storm Giant, etc), would that creature be unable to threaten? Would it provoke an attack of opportunity by striking unarmed?

Yes, to all those, the only exception would be the monk,
an example: if you knock a sword out of an orc's hand and it punches you you that provokes an attack of Opprotunity, unless it had the improved unarmed feat

Hill Giants and Storm Giants have slam attacks.
Universal Monster Rules - Natural Attacks: "Some fey, humanoids, monstrous humanoids, and outsiders do not possess natural attacks. These creatures can make unarmed strikes, but treat them as weapons for the purpose of determining attack bonuses, and they must use the two-weapon fighting rules when making attacks with both hands."
This doesn't say to treat unarmed strikes as weapons for purposes of threatening or provoking, only for attack bonuses. That may have been the intent, but I think they provoke/don't threaten unless otherwise specified.
