The encounter is a group of Violet Fungi. The party knows what they're doing design-wise, strategy-wise AND they're arriving later than expected. Between the Speed 10 and +4 to-hit bonuses, I guarantee the normal encounter won't shave a hit point off my players.

However, it did just occur to me that I could have the fungi use them as touch attacks to deal no damage, hoping to trigger the Rot. That might help make the encounter worth its budget.

What level are your players? with 4 attacks a piece I would expect one or two to hit and it only takes one bad save. If they are only level 2, 3, or 4 that AC 15 becomes hard to hit after a d4 str damage or two.
Letting it work off touch attack is kinda unfair IMO unless players can do that with their abilities as well.

The encounter is three Violet Fungi. The AP assumes that they reach that point at sixth level; my players are already in their seventh. In its current form, the most likely outcome of the fight is that my players would notice the fungi from far away; that one of the casters would win initiative and prevent them from closing in; and that the frontliners with their ACs of 24~ wouldn't be hit by any of the attacks at +4.
