Let's say I cast Charm Person on someone who's of indifferent or unfriendly or possibly even hostile attitude, and he fails the save.
Now he regards me as a friendly, so diplomacy checks to get anything done by him are usually relatively easy.
So basicly there's this guy who just doesn't like me (unfriendly), unfortunately he has the ears of a few other people. So I charm him, and get him to talk to those other guys on my behalf.
Now after an hour or so, the spell wears off again, will he realise that he must have been under a spell, or will he put it off under "that guy was nicer than I thought" or maybe "weird, how could he talk me into THIS?"
Because if you have to deal with this person again, or if he knows where you live, having him know what happened might be bad :)

As far as I understand it, your target knows that you "jedi-mind-tricked" him. If you want to wipe his memory, there's a separate spell for that. The other way you could play this is to require a spellcraft check to recognize the spell as it was cast. No spellcraft, no knowledge of why exactly he seemed so convincing before.

Well you have the following bit in the magic section:
A creature that successfully saves against a spell that has no obvious physical effects feels a hostile force or a tingle, but cannot deduce the exact nature of the attack. Likewise, if a creature's saving throw succeeds against a targeted spell, you sense that the spell has failed. You do not sense when creatures succeed on saves against effect and area spells.
There is no such text regarding failed saving throws.
Now if the target is knowledgeable, he may suspect something depending upon the number of clues available to him.
How out of character did he act?
Did someone cast immediately before this behavior began? (Heck if he has spellcraft.. hmm that annoying guy cast Charm Person and suddenly I decided I liked him.. HEY!).
Was there a contest of CHA?
Likewise even if he doesn't realize that magic was involved, if he didn't like you to start he might really resent the outcome and move towards hostility in the future.
But does he directly know? Not as far as I know and what you've described.

I would say that once you successfully cast charm person, that person's perception of the spell would be in a positive light, because his good friend cast it, and why would he do anything to harm him? Even after the spell expires, it wouldn't erase the memory of spending time with a friend. Maybe they will have a falling out in 1 minute/per caster level, but that time will always be looked back upon with fondness.

The spell doesn't say that it wipes memory, so it doesn't. How much a creature will know will depend on
1) Whether or not it was trained in spellcraft.
2) How intelligent it is
3) Exactly how far out of the creatures personality you made them act. If you charmed a greedy guard and handed him 50g to let you into a club he probably won't suspect anything. If you made the same guard save you from a rampaging troll (after his ressurection) he's probably going to notice that it was a little out of character for him to stand up for someone like that.
