There is an actual formula, and I figured it out once. It is not in the books though. It has to be reverse engineered.
The base weapon diee doubles and the strength bonus is doubled.
Examples:
Triceratops
Offense
Speed 30 ft.
Melee gore +17 (2d10+12)
Space 15 ft.; Reach 15 ft.
Special Attacks powerful charge (gore, 4d10+16), trample (1d8+12, DC 25)
Statistics
Str 26,
---------------------------------------------
Rhino
Offense
Speed 40 ft.
Melee gore +8 (2d6+9)
Space 10 ft.; Reach 5 ft.

Sometimes you add STR mod x2, sometimes you add STR mod x1.5:
