are there any prisons in Golarion, im not talking about jails in towns and villages im talking like life sentence prisons.
i always thought it would be cool for there to be like maximum security prisons in a fantasy setting, i even think it would be kind of cool for an Adventure Path dealing with one.

In fact, the newest adventure path that's just now starting up, Carrion Crown, begins with an adventure set in a haunted prison!

i have often thought that a great idea for a game would be to start players off imprisoned and the start of the game is them trying to break out of prison
Very hard to do, make sure your players don't mind starting the game in as the underdog, with little control and few options.
Also making sure they see the clues on how to escape can be tricky with out it being too railroady.
Of course they could end up in the same cell with a prisoner that's got the plan and then post escape - assuming the escape plan works, if it doesn't then what? - that prisoner can be the plot hook.

I've always pictured D&D "high security" prison as Cayenne or Alcatraz (or better : Impel Down from One Piece)... ;)
A lot of useless works like breaking rocks, mean guardians, and anti-magic cuff (maybe the one thaat gives electric shock to you and the other guys chained with you when you try to cast ;p )
The kind of place where a King could find some commandos for suicide missions in exchange for liberty... :)
But don't forget the mines... Salt, Coal mines are among the least dangerous... Copper Sulphide or Lead might be more dangerous... I don't talk about uranium yet :D
There's also the "testing" of ancient artifact, of new potions, etc.
The Circus game is a classic along withe the galley...
There's a lot of fun with prisonners in a fantasy set ;)
Ah but if you are noble no torture or prison for you... You are to be held hostage and treated (as long as you play your part as a gentleman that is ;) ) like a guest, you can even keep your servant or better have servant be sent from home... :)

Dreadhold: Eberron's Inescapable Island Prison is detailed in Dragon #344. It also features in the novel Storm Dragon (The Draconic Prophecies, book 1) where the protagonist is freed from the prison to start of the plot.
