Can you hop into a floating disk and move it about if you are the caster? The "follows you at 5ft" applies when you aren't specifically directing it.
How does Floating Disk treat bodies of water? The spell description says "floor" - will it float above the surface of the fluid, or will it follow the bed?
(Short story: cave blocked by a tarpit)

well, I doubt one can jump into a Floating Disk, what with it being a Disk and all, but onto is sure, though it depends on what you're trying to do with it.
IE: you can't use it to survive falling off a cliff, it'll hit the ground and bounce, or alternatively just stop and the difference in 2-3 inches isn't enough to stop fall damage.however you can use it to safely cross a pool of green slime.

It may be a little stretch, but it does sound like you can jump "into" it. It may be a disk, but it's not a completely flat plane.

This seems to be an issue you should ask your GM about, I personally would rule that you can jump onto it and that it would move as you directed it to, but it wouldn't float over water.
The reason is the description says it floats over the GROUND, if the pit is deeper than 3 feet you'll sink through. A good use for it might be to avoid pressure plates from traps on the ground or to avoid being tracked by footprints as I (again as DM) would say that it would increase the DC of being tracked as if you were moving along stone
