This is a nice ability for blaster casters, but I'm not clear one one thing.
Would changing a fireball to an acid ball mean that it would bypass SR? Acid spells do, but they're conjurations. What say ye?

Nope, the only thing that changes is that it is an acidball instead of fireball, and deals acid damage.

Technically no it would not by pass SR.
Acid spells bypass SR because they are conjuration spells and conjure an agent that then damages the target.
This is kind of where there is a breakdown in the "Logic" of the magic system/fluff. Technically evocation spells dont normally conjure a physical substance that then damages the target so they normally do not bypass SR.
Rules as written, no bypassing SR with the Versatile Evocation ability.
I would say for fluff reasons as an explaination that evocation spell made to do Acid damage create an energy that desolves things as acid would. That is how it does acid damage but it doesn't actually summon acid.
