So are you trying to determine the character's ability to earn a living with Fortune Telling, or how good they are at actually predicting someone's fortune (whatever that is)?
The Profession (Fortune Teller) should be used to reflect the character's ability to make money doing it. They might be 'for real' and able to get paid for it. Or they could be the world's best con-artist and have the same Profession (Fortune Teller) skill as the legit seer.
If I was going to have a skill to represent their ability to actually get a clue about the future, then I'd make that a Craft (Fortune Telling) I suppose, with the bonus based off of Wisdom.
But that's just me :)

If you have a fortune teller in your game, then you might like this little system we've been using for a few sessions:
My Varisian Oracle makes a 'reading' each session using a fantasy tarot deck. At the beginning of every session, my character plays out one "PC" card from four that were chosen from the minor arcana to represent the PCs. Then she plays three of the major arcana. One each for the past, the present and the future. Using the many online interpretive sites, she makes a 'reading' for the PC selected in the first card.
The GM then integrates that reading into the plot in some way during that session or one of the ones immediately after it. The players love it, and the GM thinks it is great as it adds a challenge for him and really throws some unexpected twists into the plot for everyone. I highly recommend it if you have a Varisian seer in your group.
