Off the top of my head, the best way to dupe True Seeing is through non-magical means. ie: the Stealth skill. True seeing does nothing against natural non-magical stealth.
To quote the spell itself:
True seeing, however, does not penetrate solid objects. It in no way confers X-ray vision or its equivalent. It does not negate concealment, including that caused by fog and the like. True seeing does not help the viewer see through mundane disguises, spot creatures who are simply hiding, or notice secret doors hidden by mundane means.
So, there is:
~putting an actual wall between the hider and the seeker.
~Any of the FOG spells
~Actually using the Stealth skill

Is there a way to not be detected by True Seeing? From what I can tell, the only way to stay invisible to someone under the effects of true seeing is to be under the effect of mind blank. Does that even really work? Are there other methods I'm missing?

As mentioned in the spell, purely mundane means of hiding, including cover, concealment, camouflage, or just a good mundane disguise all technically work, and true seeing would only show the exact same. A mundane, cheap smokestick actually becomes useful against outsiders with true seeing-vision.

Yar.
Not being a rogue does not mean you cannot use some ofthe same tactics. Yeah, your invisible, but you can still hide behind a bush while invisible. If your stealth is good enough, you are still hidden because of the bush. Being invisible while inside fog means you are both invisible AND concealed by the fog.
So yeah... even while invisible, don't stand out in the open. Otherwise anything that has true seeing will pincushion you. Now, if they have both true seeing AND detect magic, you're in a bit more trouble. Then it's better to not be invisible at all.
