Sorry about this (relatively new to PF) but I’m somewhat perplexed by the number of attacks creatures get on their turn according to the Bestiary. It’s going to be me being a bit thick for sure. It’s the use of the words AND, OR, or the use of a comma between the various attacks that serves to confuse.
For example a Bulette (page 39 Bestiary) has a bite AND 2 claw attacks, whereas over the page a Cheetah has a bite, 2 claw attacks? What’s the difference between the AND in respect of the Bulette and the use of a comma to separate the two different attacks that the Cheetah has?
Also, how do you resolve 2 claw attacks? Do you roll one melee attack for both or treat each claw as a separate attack and roll to hit twice?

The Bulette and Cheetah's attacks should basically be the same regardless of how it is written out I believe. On a full attack action they get a bite and 2 claws (the 2 claws are rolled for separately).
On a standard attack action they get either the bite or a claw.

Order listed was a holdover from when only the first listed attack form was the primary attack form. Used to be only the claws OR the bite could have the full attack bonus with the other attack form having the -5 [or -2 with multiattack feat].
3.5 Cheetah - Bite +6 melee (1d6+3) and 2 claws +1 melee (1d2+1)
~ Special Attacks: Trip ... claw or bite ...
PF Cheetah - Bite +6 (1d6+3 plus trip), 2 claws +6 (1d3+3)
