Is an oracle with the curse of blindness susceptible to gaze attacks?
If the gazing creature has total concealment relative to the oracle, then the oracle is not affected (see Wearing a Blindfold under the rules for gaze attacks).
Also, are they able to cover their eyes with a mundane object (such as a blindfold) and retain their Extraordinary abilities of blindsight, etc.?
Why wouldn't they retain it? I can't think of any creature that needs eyes to use blindsight/blindsense.

Right, that all makes sense, but I was wondering if it was possible that the "seeing as darkvision up to 60ft" would create a line of effect from the Gazing creature to the target creature?
To put it another way, would an Oracle retain all of their types of "vision", including the darkvision, if they were blindfolded?
Really it boils down to: does a blinded Oracle need eyes to "see"?

That would be the curse of clouded vision, which allows normal sight to 30 feet. Gaze attacks typically have 30 feet range.
A blinded or blindfolded oracle would take the same penalties as anyone else in the same condition until she had a high enough level (with the curse of clouded vision) to gain blindsight. She wouldn't have any darkvision. Darkvision allows you to see regardless of darkness, but blindness prevents you from seeing at all.
