I always thought there were different type of armor bonuses but as of lately the forums are making me doubt it...
so I thought Mundane armor (non-enchanted) and armor bonus were different there fore stack able. So a character could wear non-magical full plate armor and cast mage armor on himself and they would stack. Same thing with a shield.
also a dwarf with the trait to give him a natural armor of 1 and gets the +1 natural armor from the class stack, right?
also only deflection is stackable? I assumed it was dodge and deflections that could be stacked.

The dwarf in your example would benefit from both, yes.
Dodge bonus does not stack, deflection does.
To get a first idea what bonus types exist and what (might) stack(s):

No there are armor bonus and enhancement bonuses to armor. Mage Armor is an armor bonus and so would not stack with fullplate, but if that fullplate was +1 or you cast Magic Vestment on it then you would add those armor enhancement bonuses to your AC. Shields work in the same way, if it says shield bonus it does not stack if it gives an enhancement bonus to your shield then it will stack - so if you have a heavy shield and cast shield you simply take the shield spells bonus since it is the greater, etc.
Its pretty much the same for Natural Armor, though its worth checking the specific wording of the feat/ability with natural armor as they sometimes have exceptions to the rule spelled out. Again enhancements to magical armor are what you are generally looking for to increase your bonus outside of exceptions.
Deflection bonuses are not stackable with each other, they stack with other AC bonus types, etc., but you could not wear two Rings of Protection +1 to get a +2 bonus for example.
Dodge bonuses are stackable, so you can have a +1 from the Dodge feat added to your Dwarven +4 Dodge bonus vs. giants for a +5 dodge bonus for example.

The Dwarf in the example would only benefit from both in the sense that he would get Mage Armor's bonus versus incorporeal touch attacks. Otherwise Mage Armor would be wholly irrelevant while he wears the fullplate.
Deflection bonuses do not stack with each other, dodge bonuses do. To quote the link you offered...
"Bonus (Dodge)
A dodge bonus improves Armor Class (and sometimes Reflex saves) resulting from physical skill at avoiding blows and other ill effects. Dodge bonuses are never granted by spells or magic items. Any situation or effect (except wearing armor) that negates a character's Dexterity bonus also negates any dodge bonuses the character may have.
