1. Shining Knights are able to add their shield bonus to their mount's AC. Can you wield a tower shield while mounted, and would the mount get +4 AC?
2. Say a paladin takes a one level Oracle of Lore dip and gets Sidestep Secret (use CHA bonus in place of DEX bonus to AC and Reflex saves). How does this interact with the reflex bonus from Divine Grace (add you CHA bonus to all saves)?
3. When you wield a lance one-handed while mounted, do you still get +1.5 STR modifier on damage rolls and does it count for two-handed weapon feats (Furious Focus, etc.)?

nothing says you can't, so you can wield a tower shield while mounted.
what you cannot do is plant the shield in the ground to get your mount cover unless you are small and riding a medium mount. the shield is only 5 feet wide, horses are 10 feet wide (mechanically, you would be presenting the shield side to the enemy by turning the horse)
also note that paladins are not proficient with tower shields. you will need to take the feat to becomeso, multiclass into fighter,or suffer the rather large penalty to attack rolls and skill checks.

Divine Grace (Su): At 2nd level, a paladin gains a bonus equal to her Charisma bonus (if any) on all saving throws.
Sidestep Secret (Su): Your innate understanding of the universe has granted you preternatural reflexes and the uncanny ability to step out of danger at the very last second. Add your Charisma modifier (instead of your Dexterity modifier) to your Armor Class and all Reflex saving throws. Your armor’s maximum Dexterity bonus applies to your Charisma instead of your Dexterity.
they are untyped bonuses, so they stack. furthermore sidestep isn't even a bonus, its a replacement.

I would say definitely no and a rather firm no . Most of the two handed weapon fighting feats will apply to a 1 handed weapon being wielded in 2 hands, so what seems to matter is how you wield it, not what it is.
no reason you can't wield a lance 2 handed while mounted though.
