Hell Knight stats?

Am I blind or do I not see any stats for Hellknights?

Not in the Curse of the Crimson Throne proper, no. There may have been some in Guide to Korvosa, but don't hold me to that. If so, they were probably 4th level fighters.

The Council of Thieves AP has a Hellknight prestige class in issue 3--What Lies in Dust. It'll probably be pretty helpful for statting your own. If you don't have access or don't like Hellknights as a PrC, then I'd stat them up as mid level fighters specializing in heavy armor and shields.

The hellknight prestige class will be appearing (in a 10 level form, rather than the more experimental 15 level form we did in Council of Thieves) in the Inner Sea World Guide due out in February as well.

They don't play a large enough role in Curse of the Crimson Throne, as written, to have necessitated stats. The best place to go to get Hellknight stats right now is probably Pathfinder #30; a quick flip through that reveals the following stat blocks:

CR 5: Hellknight (fighter 5/hellknight 1)
CR 8: Hellknight commander (ranger 7/hellknight 2)
CR 12 Hellknight ghost signifer (sorcerer 11)

I believe the upcoming "Rivals Guide" will have at least 1 Hellknight in it as well.

In "The Edge of Anarchy" it often references patrols of Hellknights stalking the city. But no stats of a level for that adventure

When my pc's captured Trinia and were attempting to escape Midlands district I had a need to make the atmosphere of Korvosa more dangerous to a certain halfling rogue, who is doing an awesome job roleplaying, but ends up taking up the sessions with many solo side jaunts. I had a gang of Imps attack and attempt to rob him on one such and the party caught up and drove them off (imps are no drop in the bucket for 2nd level pcs) this certainly made him reconsider solo without muscle or magic. I have decided it needs reinforcement.

The party decided to take Trinia to The Pantheon of Many where the Paladin has connections to his patron Iomedae and have been put up in a sort of "safe house" till they can get the head cleric to cast Zone of Truth or the like. My plan was that the imps (with the infernal connections to the Hellknights order) noticed that it was Trinia and followed the party using the at will invisibility. Then went back to a patrol of Hellknights, or one of the orders clerics and gave the info to them. Which spells for the party "Midnight Hellknight attack" with a possible "Imps on the second floor" thrown in for good mayhem's sake. So I too seek a lower level Stat block...I may just use generic 2nd or third level fighters...and have yet to plunder my guide to Cheliax. Any thoughts on flavor that would make them seem more Hellknight-y?
