The first one has a CL of 6...not 7. EK makes you lose a CL at level 1 so you will only have 3rd level spells.
The second one is CL 8 so once again only 4th level spells not 5th.
From a pure power PoV, fighter 1/wizard 5/EK 10/wizard 3/fighter 1 Makes for the best progression. You end up with CL 17 for 9th level spells and that last fighter level lets ypu snag a BAB 16 or fighter level 12 req feat. However it won't be like arthas at all. If you want arthas I would go with a cleric.

What makes you think cleric? Necromancer specialist gives the ability to command undead...not that the graveknight doesnt give that as well. Necro can animate along with vampiric touches, etc. Why cleric might I ask>?
