I'm working on a build that incorporates the monk and I've been exploring options for using unarmed strike.
Does anyone have any thoughts or actual rules on unarmed strike and poison? Would a monk be allowed to wear gloves or gauntlets and apply poison to them while making an unarmed strike?

There is nothing unlawful about poison. Its just evil and underhanded.
Does poison not usually go onto slashing or piercing weapons? If it a contact poison, i think the monk would poison him/herself when it gets applied :P
Poison usage is not evil in itself unless your GM says otherwise. How you use the poison dictates if it is an evil act or not.
As for the OP, the book does not state if you need to have a slashing or piercing weapon to deliver the poison, but that does make sense to me. Shuriken make a great delivery method (by base book) and so do things like the kama. If you have access to the APG, then Cestus (for the piercing) and brass knuckles (if otherwise is okay) are great.
