I was listening to a Chronicles Podcast from one of the Pathfinder Seminar at (GenCon?) and there was a question about "Things Paizo can't do due to open gaming license legal issues" and I was curious if that would be expanded.
Some specific monsters were referenced that Wizards owns that Pathfinder can't do due to Open Gaming license reasons, such as the Beholder & Mindflayer. What are all the other monsters that Paizo can't do? Is there somewhere I could find a list? Thank you!

beholder
gauth
carrion crawler
displacer beast
githyanki
githzerai
kuo-toa
mind flayer
slaad
umber hulk
yuan-ti
These are all trademarked by Wizards of the Coast. You could probably spend a few hours and find more trademarks by searching the records of the US Patent & Trademark Office, but they should also be listed under "product identity" in the licensing section of the Monster Manual.

I don't see Thri-Kreen on that list. Are they open content? They were in the Expanded Psionics Handbook after all.
If here then OGC. Otherwise no.

Thri-kreen aren't the first mantis-like humanoid race. (Anybody remember Thraints?)
"How much would you have to change to make it Open Content?" That depends on how much lawyer you're willing to buy. There's no unambiguous rule about it. Do your Mantis Warriors throw shiruken and have psionic powers? Then you'll need to buy more lawyer.
