Dunno about Safari 5.1 specifically, but a few days ago we did roll out "teh new hawtness," an extensive rewrite of the underpinnings of the website to make it more responsive. That might be part of what you're seeing.
The current release of Safari is 5.0.1 on Windows or OS X. It's so fast you're seeing version numbers from the future!

I got this update yesterday pushed out from Apple. You're right though it is 5.0.1

The slowness of the paizo website and board is caused by a lack of servers and/or not enough bandwidth, and not your browser.
Actually, if you're still seeing slowness, it's on your side... Gary's recent architectural changes, which have been in place for a few days now, have brought our response times down dramatically; our servers aren't even breaking a sweat, and we have bandwidth to spare.
