I played a Shadow Summoner once, from the Into the Breach: Summoner pdf. Replaces your shadow with an Eidolon (which, to be honest, had some minor fluff/mechanic issues, but not the point). The Summoner himself was dressed like a gentleman, long suit coat, top hat, glasses, etc. In reality, him and his shadow were basically murderers who enjoyed toying with others. That Eidolon saw plenty of stealth action, as the GM ruled that it got a major bonus to stealth at night due to being a living shadow.

A while back I played a half-elf Wild Caller with an eidolon named Cecil, who I described as a displacer beast minus the tentacles. He was a combat monster with his extra set of claws and pounce, not that unique though.
My most unique was a goblin Synthesist I ran as a cohort NPC while GMing Skull and Shackles. I played him up as having no idea he was a Summoner at all, and he never (knowingly) cast any spells. Whenever he was threatened or enraged, he would black out and turn into this big flaming monstrosity (very dangerous aboard a ship!), and later have no memory of the event.

I haven't read the rules fully (only glanced), but I'm unsure how I can do it other than to make it look like a gelatinous cube or another ooze type, but mechanically act as an ooze type.

I did a gnome master summner who used his eidolon as a fast riding beast. It had a bite with push to knock people out of the way when they were trying to escape.
I used an Escher drawing for it.

I made a synthesis Half-elf. His name is Ton'i'thall Stars (Tony) Bi-ped, he can fly, magically, and at great speed. has many long range electrical powers, like lightning bolt, and electrical dragon breath. a thick armor plating. slam attack. His m.o. is to fly around the battlefield using his custom bracers that hold 10 Wands for each hand, to magically pummel the enemy. (still can only use 1 wand per round) the eidolons name is Jarvis... yeah... I made Iron Man...

My current Synthesist is Golux, based on James Thurbers 13 clocks. He is a small man with an indescribable hat, and a very describable beard (Wayang. I'm not 100% sure the beard is kosher, but I haven't found anything saying they can't have them.)
His Eidolon is the Todal, a blob of glup that looks like it has been dead a dozen weeks, and makes a sound like rabbits screaming. (Protean) (It should probably be a devil, given that in the original story the Todal is an agent of the the devil sent to punish evildoers for having done less evil than they should, but protean gives me more flexibility, and this creature needs it.)
So far the Todal's signature move is "the todal bites the creature as it approaches,(Reach, bite, grab) yanks it into the air, tosses it like a rat, and then grabs it again with it's tail, choking it. (tail, grab)"
I plan to run it up the final embrace line of feats to make it (with flying), (Reach, Bite, Grab, Constrict x2, Bite, Grab, Constrict x2, tail slap, grab, constrict x2, drop 10 ft.)

I've only played one Summoner so far. She was an orphaned half-elf. When she was little her beloved older brother used to make up fairy tales for her at bedtime starring a large, winged fox-like creature named Yuna.
Her love for her lost brother inspired her to make her eidolon look and behave like the creature from his stories.
This later caused a lot of confusion for the summoner's companions who were under the assumption that Yuna was her "imaginary friend". They were very surprised when Yuna actually showed up!

A concept I came up with was a summoner who was an angelkin Aasimar and (in a flavor exception to the rule that your Eidolon can't be specific) was an Angel based eidolon (this was pre-unchained, but with that I have been thinking about remaking her as an actual angel eidolon using those rules!) that was her identical twin sister.

I realized I could play a young man who summons a giant robot. All the thing needed was enlarge person and mage armor and later evolutions to boost armor and size. Buster Machine Number 15 could have fists that shoot out by using the reach evolution + slam and improved natural weapon. In order to buff him the young man could do tokusatsu style somatic gestures and speeches about friendship and justice.
Also, if Buster Machine Number 15 ever fell in battle, the young man could call him back to the fight even stronger with a short speech about friendship and force of will, using summon eidolon and augment summoning. I've been waiting for an appropriate game to play that character in.
The other character is an elderly gnome paladin to desna who bonded with an outsider to keep helping those in need by borrowing its strength. He has a few levels in paladin and the rest are in synthesist. His summoning ritual is an oath he swears to defend justice as well as the rights and freedom of all sentient beings. I wrote it out in 10 6 second stanzas somewhere, one for each round in the minute long summoning time. In his transformed form he focuses on armor and multiple enhanced claws. He looks, acts and sounds a lot like a certain autobot transformer, sans the morphing into a truck, and with the addition of limbs that bisect in combat for additional attacks.

My main idea for a Summoner's generally been to use the forbidden Synthesist to play a spirit of justice inhabiting a person, like (G#~!@$MIT) Anders from Dragon Age II.

I played a Shadow Summoner once, from the Into the Breach: Summoner pdf.
That PDF also had an archetype for an summoner whose eidolon could almost always be around, even when the summoner was unconscious. That gave me the idea for a powerful summoner's wife who gave birth to twins -- but there was something a bit odd about them. It turned out that the odder of the two twins (since neither of them was by any stretch normal) was the eidolon of the other, who was a summoner since before her birth. The tendency of one of the twins to vanish without notice only to reappear after the other twin screamed, cried, and flailed around her hands and feet for about a minute most likely drove the parents completely insane.
