Pearls of Power and Material Components

If I have a pearl of power, cast a spell with an expensive material component, restore the cast spell with the pearl and then cast it a second time.

Did I just use up one or two sets of the expensive material components?

Two sets. Components aren't replaced with Pearls of Power.

Your good if the spell requires a focus though, since that doesn't get used when you cast a spell requiring one.

All a pearl of power does is let you re-prepare a spell. It essentially restores a spell slot to you filled with a spell you have cast already so that you can cast it again.
