In the Bestiary, under Monster Cohorts it say that a Monster cohort that gains enough experience to gain a 'level' per the chart should gain a class level (most likely fighter)
So far so good ...
When you actually read the rules in the Bestiary for advancing a monster by adding class level it seems pretty wonky. For instance, why would your monster cohort suddenly get all of his ability scores changed just because it gains a class level? Is this rule more for when you are building a monster from scratch? honestly it seems very odd to mess with all a monster cohort's ability scores all of a sudden like this - the increases and decreases are pretty big (+2 or -2 to almost evry stat)
Thoughts?

Your monster cohort wouldn't change its ability scores. That rule is more for building a monster with class levels from scratch as a GM.
If I were GMing a guy who took Leadership and got a monster cohort, I'd give the monster its class bonuses to its stats right out of the box, though, so that when it DID start taking class levels, it'd all be good.
AKA: a player who takes a monster as a cohort using Leadership had better be ready for complexity! :-)

As a GENERAL rule I am not in favor of monsters as cohorts. Mainly because they are... umm monsters! lol Now obviouly there are some exceptions, like gnomes as monsters (oops wrong edition! lol NO EDITION WARS was just a FREAKING JOKE! SHEESH people can't take a joke any more).
But seriously it gets complicated, the bookkeeping alone is enough to make me threaten to destroy their home (with them asleep at the time) with a Meteor of Ultimate PC Extermination from the GM's Plane!
Heck just a story line to justify it can get complicated!

Nearly every single one of the players has or will be taking Leadership for a monstrous cohort. Also, every one of these monstrous cohorts will be gaining class levels. One thing that we have done is have the players roll stats for each of the monsters. This makes each cohort unique and sort of tailors their class and feat selections.
