Damn... I need to read this full thread...
but there is one thing... I am not sure about the others...
yes.. its not detailed.. but at least Iomedae's church is hyrarchical...
From the 1st Sword Knight to every single circle caming dowm from him/her (this sword 1st sword knight has between 9 to 13 other swords that themselves are sword knights of their own circles...)
What I understand is that there is is one 1st knigth (either in Mendev or Lastwall) and from there the organization comes...
In our world there actually 2 organizations for the Iomedaian church... one centered about Mendev, the other centered aroudn Lastwall... they are highly strategical points... while Mendev uses all of what it has... LAstwall keep some and send others where they are needed, while local tempels around the world do the same... Iomedaian temples send holy warriors were they are needed... (sounds evry much like the army)... while Absalom has some old, or higly wounded clerics serving and teaching they ahve a good Paladin "Academy"... butabsalom is not a focus... because its a safe part of teh world, Varisia, Mendev, etc have higher priority.
In the case of Abadar I understands like with the historical Templars.. if you take a note of credit to another city, the Bank of Abadar would make it valid... so it doesn't where you are... you money is valid... because Abadar makes it so... that tells me of international organziation.. just dividied by national and then regional/city managements....

While Golarion might have many gods, they're not nearly as many as our world has/had - after all, Caedwyr's listing above contains just 4 out of many, many cultural collections of gods from our real world. Odin and his Norse deities are missing, Tiamat and the other Babylonians, and we haven't gotten that far East yet...
The difference would be that Iomedae, Asmodeus, etc. actually exist in Golarion.
