Whenever a new race comes out, where is that races niche in different campaign settings spelled out? Is that something that pops up in Dragon? I looked around, but couldn't find anything like that.

The only mention of minotaurs in Ebberon that I remember was in Droam where that are mainly used as foot soildiers and the cogs below Sharn as bodyguards to gang leaders.

That sounds about right to me. Droaam is their native land, so you might also expect to find them in the Shadow Marches, the Eldeen Reaches, and Western Breland. You're unlikely to find them further than that unless they're adventurers or House Deneith mercenaries.
Thanks for the minotaurs in Eberron info. I was mostly just wondering, in general where that kind of info can be found. (other than asking helpful folks like yourselves on the message boards)
