We don't have a gallery per se (yet), so your best bet is to peruse the Paizo blog and the blog tags, in particular the monsters, portraits and wallpapers tags. There are also tags for each artist we use.

also The Wiki Gallery has all of the art available as part of the CUP sortable by year, subject, artist and source as well

It was mentioned before that one of the more expensive aspects of printing publications (if not THE most expensive) is the art, and because of that they might be leery of just giving it all away for free.
Personally I'd settle for a reference guide to the images in the avatar section; I'm more than willing to track down images myself if I know where to look.

If you have the pdf versions of the ap's then you can right click on the images and extract full-res versions. I know it doesn't address the gallery issue, but wanted to make sure you knew that they are available.
Is this only on the new ones because my PDFs of RotRL dont bring this option up.

if you look in my profile, there is a link to a image extractor that works well... Adobe took out many of the options to extract when they put out V9 of the reader
