Question regarding the item creation rules:
If
...This process can be accelerated to 4 hours of work per 1,000 gp in the item's base price (or fraction thereof) by increasing the DC to create the item by +5.
and
The caster can work for up to 8 hours each day.
Does this mean that an item crafter can create 2000 gp worth of an item in 1 day (8 hours) by raising the craft DC by 5?
Is that the intent, or is it to only have to spend 4 hours/day crafting?

The crafting is normally assumed to be done in the 8 hours of downtime so if would reason that you can do 2000 pg per day, as that is the only way its really beneficial.
There will be exceptions, but the rules assume you get 8 hours down time.

That would be my hope, but it's a little vague.

It's both.
It lets you get in a normal day of crafting with just 4 hours, and it lets you craft things "faster" by doing two days of work in 8 hours.
It's been fascinating watching the interplay of that with the crafting DCs, with and without the spells, in my Second Darkness group. Sometimes players risk failure to craft things quickly, other times they ask someone else to craft what they could, but the other can craft it fast.
Great rule.

Excellent! This makes it a lot easier to get stuff done. A +3 weapon in 9 days is a lot more reasonable.

Whiel caster level is not usually a prerequisite, I belive the weapons and armor are "special cases" that can not be bypassed that way. Mind you I would LOVE to be proven wrong for my crafter but currnetly that is a non bypassable effect.
Creating a magic weapon has a special prerequisite:
The creator’s caster level must be at least three times the

Well it says it is a special prerequisite not a standard prerequisite, but I can see it going either way.
The DC to create a magic
item increases by +5 for each prerequisite the caster does not
meet. The only exception to this is the requisite item creation
feat, which is mandatory. In addition, you cannot create spelltrigger
and spell-completion magic items without meeting
their spell prerequisites.
Hmm I think I am leaning more to your way of viewing it now despite it being called a special prerequisite.

Actually, I'm adding axiomatic (CL 7) to a +1 light crossbow, amongst other things. It's just a +3 equivalent for pricing and time (16,000 gp to add to the current +1 item). Doing this in 8 days instead of 16 makes a biiig difference. Soon, my lawful kobold will be plinking elves...I mean Drow, yeah that's it...like there's no tomorrow.

While caster level is not usually a prerequisite, I believe the weapons and armor are "special cases" that can not be bypassed that way.
It's not usually a prerequisite, but is in these "special cases". And thus +5 to DC to bypass if you don't meet it. As I think you see by the end of your post :)
It's vague enough that if a DM really doesn't like the idea, she can ban it.

Cool, DC 17 to make fast (or 22 if you don't use an Order's Wrath each day).
