Seeing as a monk already has Double Slice (in effect), and Improved Two-Weapon Fighting (for fists) by the time the monk gets a BAB of +11, why not rend? It would apply only to fists of course. I suppose not since a monk doesn't have off-hand attacks per se? I'm not saying the monk needs it, I'm just curious. One could argue that the increased damage/level sort of represents a "rend".
How about Two-Weapon Defense?

Hey, what about a Fighter-7/Monk-4/Templar-1 with two weapon fighting feat using a great sword in both hands and making an off-hand attack with his feet, head, knees or elbows as Monks use thier whole body and can make unarmed attacks with thier hands full. Or even having a Longsword in one hand, a Heavy shield in the other and making an off-hand unarmed attack with TWF? I am having a difference of opinion with my DM as he does'nt think that this is possible and should have one hand free to make an off-hand unarmed strike even though I'm a Monk. Anybody have any ideas?

Easily corrected by referencing the Unarmed Strike class ability of the monk:
A monk's attacks may be with fist, elbows, knees, and feet. This means that a monk may make unarmed strikes with his hands full. There is no such thing as an off-hand attack for a monk striking unarmed.

I actually did that earlier today and he either didn't get it or just doesn't want to alow it. He is trying to stay with the core rules and I think he is a little confused. I may need to get a FAQ ruling on it, any other Ideas? BTW thx for the help.
Your welcome! I'm not sure how it could possibly be more clear than what's printed in the class ability, so I doubt a FAQ would help. The core rules clearly state (1) monks can attack with both hands full and (2) monks don't even have an off-hand attack for unarmed strikes. Maybe point him this way and we could try to figure out his reasoning?
