I must chime in even though I haven't seen any of the art in question except for the preview on the Paizo Blog. The generally negative reaction to the appearance of tieflings in this adventure makes me wonder how much of this reaction is coloured by people's negative view of D&D 4e, which has taken the brow-ridge-horns tieflings as the standard.
Obviously I can't speak for everyone.
I don't hate 4E. In fact I own and do play it. I dislike the tiefling appearance in that game as well and did from the very beginning. So in my case, your supposition doesn't apply.
I'll grant you because WOTC was so uniform and across the board, there may have been concern that the same uniformity might happen in this game's artwork. (A concern which has been dispelled)
Getting back to the original point, I guess the large frontal horns are not that big of deal since the Developers have made it clear that this is not indicative of all tieflings. Variety is the spice of life.
That I've said that, please don't unleash a Developer on me! ;) At least not till I've gotten some rum and coke!

All that being said, I can be as knee-jerk in my reactions about the things I love as anyone - just get me going about the Transformers or G.I. Joe movies some time. But in such cases, I find that it's more helpful to take a deep breath, fix up a rum and coke, and play an hour of My Life As a Darklord or Heroes of Might and Magic III. Slaughtering the innocent always puts the world and my control over it back in a much more manageable perspective.
You should try a week or two in Cancun. Much, much better. They fix the rum and cokes for you.
