Ride, Animal Handling, and mounts in combat

The Ride Skill says:

The Animal Handling Skill says:

So here are my questions:

1) What is the actual list of creatures that come "combat ready?"

2) Does training a mount for the Combat Riding purpose via Animal Handling get you all the same benefits as being a warhorse (for the purposes of these skills, that is)? Can you ignore the Control Mount in Battle roll with such a mount? Direct it to attack?
