The second sentence of the Turn Elemental feat implies you can damage all elemental creatures rather than a single type. It should be worded similar to the wording for [/i]Turn Outsider[/i] (See Below).
Choose one elemental subtype, such as air, earth, fire, or water. You can channel your divine energy to harm elemental creatures.
Choose one alignment subtype, such as chaos, evil, good, or law. You can channel your divine energy to harm outsiders of that type.

I'd also like to see it clarified if your Channel Energy otherwise functions as normal when using the Turn Elemental/Outsider Feat.
If you have Positive Energy, would it also heal Living Beings and Damage/Turn Undead, and would Negative Energy also damage Living Beings and Heal/Control Undead? Or is this Feat a completely distinct power that just uses up one of your Channel Energy usages, and isn't actually "Channeling Energy"?

What we've been doing is assuming that Channeling with Turn Outsider/Elemental just means that it works exactly as if the appropriate creature was undead.
Furthermore, the one channeling would affect any and all undead, elemental and outsider (of the appropriate subtypes) in the area, as well as heal all other living targets. Essentially the feats are simply adding more potential targets to be harmed by it.
(or healed by it if you channel negative energy).

Actually now that I've reread it the confusing bit is in the fluff text part and the actual benefit portion is worded pretty clearly. In the benefit portion it says "You can choose to have your ability to channel energy affect elementals and outsiders of your chosen elemental subtype as if they were undead."
So the channel power works the same for everyone except the elementals. So undead take positive energy damage, living heal.
