I can't think of any 1st-level one on one adventures (except ones I sometimes designed for a friend), but it made me remember the good old Fighting Fantasy novels released by Steve Jackson and Ian Livingston. I actually got up to number 54 of those before I stopped purchasing them. Shortly after that the book-line came to an end.

Oh, I used to read those too, back in the day - Warlock of Firetop Mountain and Island of the Lizard King were probably what got me into Dungeons and Dragons.
Two that might be able to be adapted as good one-on-one thief type adventures are City of Thieves and Midnight Rogue (probably the latter over the former).
