I am just starting to run the STAP and have only read the first two chapters. Which languages should I advise my players are common to the Sasserine region?
Common -- that's always the default unless otherwise stated.
Keoish is a regional language that, IMO, wouldn't have migrated so far; it's also Greyhawk-specific, and I don't know that you're necessarily playing in Greyhawk. Of course, Olman is supposed to be, also :)
Olman is a very obvious choice -- the natives in the jungles to the south will speak it, and it comes up in a major way later in the campaign (though the characters wouldn't know that).
My guess is Abyssal will become important, too :/

Well, according to LGG the languages for the Sea Princes are Common, Olman, Amedi, Keolandish, and Halfling, so considering the official history of Sasserine I don't think it's unreasonable to think that Keolandish is common there too.
What about non-greyhawk specific languages that might be relevant to the campaign. In other words, I'm sure there must be a few different races (e.g. goblins, lizardmen?) prevalent in the area around Sasserine and even beyond the immediate area. I'm looking for languages that a PC might be interested to learn when deciding to become an adventurer, if you know what I mean.

For standard D&D languages, the main language is Common. The following languages are probably the next most commonly used in the Sasserine area:
Aquan
Draconic
Dwarven
Elven
Gnome
Halfling
Sylvan
Olman's not a bad choice either; a lot of the ruins in the area are of Olman descent, so it's a good choice for historian type characters.

While Keolandish might be spoken (due to the Sea Prince invasion), I would think that Suloise would be the most common language considering that the founders and early colonists were likely Suel.

I'd also add Ceestial, especially for anyone who might be aiming for membership in the Church of the Whirling Fury. It will also come in handy late in the AP.
