You should probably check out Jadeite's Guide to the Inquisitor for some good advice. As for the MAD part, you should probably focus on either Str (for melee) or Dex (for archery) as your primary stat, and Wis and Con as secondary stats.
I assume the Ulfen are living much like the Norse they are modeled after. This means that they are living together a large number of people in large rectangular buildings called longhouses. One end of the longhouse is used as a barn, where they would store crops and also house animals. In the middle of the floor there would be a firepit used for heat, light and cooking. There would be no chimney, so the entire building would be quite smoky, and there would be gaps in the ceiling where the smoke could escape. The notion that the Norse was filthy was however probably a myth. Anglo-Saxon sources actually refers to the Norse as clean-freaks since they bathed once a week (the original meaning of the Scandinavian word for Saturday, or laurdag/lørdag/lördag, is Washing Day). They also had a quite strong soap that was not only used when bathing, but also to bleach their hair. Arab writers also comment on Norse cleanliness, and there are descriptions that they washed every morning. So if this also applies to the Ulfen, this means that they would probably have a mostly smoky smell.
I've made a DM map of Stolen Lands using the free version of Hexographer. The map includes ALL the encounter locations in Stolen Lands, where I've included the chapter number in with the encounter letter. One thing I've changed in the map from Paizo's version is that I've placed all the rivers on the borders of hexes instead of inside them. The reason for this is that I think this works better together with the exploration rules, since you don't have to handle partially explored hexes. Included below are links to PNG, PDF, and HXM versions of the map. HXM is the format used by Hexographer, so that you can edit the map yourself. Enjoy :)
EDIT: A few notes about the nonstandard elements on the map. The font used is Georgia, font size 20 for encounter locations, 60 for regions, and 80 for country names. The texts have a black border of 1,5. The rivers have a width of 2. The symbols generally have a size of 20%, although some, like towns and cities, have a size up to 40%. I activated the freeform placement option for the symbols.

I found these on another thread, but I'm not sure it's the official ones: Eager Striving, Well Deserved Rest, Fertility, Righteous Anger, Honest Pride, Abundance, Wealth. If these are the correct ones you'll notice that they are not opposites to the sins, like the Christian ones, but rather a different aspect.
