Your first encounter will be a CR1 encounter vs a trio of orcs. I will be running them with the stats they have in the bestiary. I will also be trying them with no boosts.
You will start on opposite sides of a clearing 100ft across.

regardless she savagely wounds one.
The wizard slays one with his powerful ice magic.
The Orc wounded by the elf completes his charge.
1d20 + 6 ⇒ (13) + 6 = 19
The elf thought she got her shield in the way, but the orc's momentum cound not be stopped. She takes 2d4 + 4 ⇒ (3, 4) + 4 = 11 damage collapsing to the ground.
Meanwhile the other surviving orc pauses 10 ft from the dwarf and throws a Javalin.
1d20 + 1 ⇒ (19) + 1 = 20
The dwarf is equally unlucky and takes 1d6 + 3 ⇒ (6) + 3 = 9 damage leaving the wizard to face 2 orcs on his own.
Should we assume the orcs win this one and reset with something different?

Isagoras takes the blow, blood oozing freely from one shoulder to the opposite hip.
But he does not fall.
"You will find those of the Order of Light harder to kill than that!"
His hands mold the air as one molds a snowball. He shouts "Unfreundlich!" and throws an orb of horrible blue air at the orc.

Ummmmmm, since my only combat spell is Ice Bolt, and I only have a crossbow, I have literally no way of harming the skeletons. I'm only not useless because I also have Healing.
Standard Action: Ready Action: At first target, cast Ice bolt with Boost(Fust target to the ground until your next turn).

the dwarf rogue will attempt to sneak attack the next skeleton.

The one skeleton can't move thanks to the wizard.
The other attacks the dwarf rogue.

and misses horribly.

Actually an elf.
Bolstered by the results of her first attack, Lucretia steps up to strike at the weakened skeleton (or the other one if the dwarf finished it off before she went). Assuming we no longer have surprise, I expect I won't get my sneak attack bonus.
Rapier: 1d20 + 5 ⇒ (10) + 5 = 15
Damage: 1d6 + 3 ⇒ (6) + 3 = 9
