If I use Share Spells to cast Shadow Projection on my tiny-sized Quasit Familiar, does it retain the +2 size bonus to Attacks and AC?
Or is his shadow considered to be medium-sized (as per the regular Shadow)?

That suggest it's the Quasit's shadow, and so should have the Quasit's size.
Your shadow has Hit Dice and hit points equal to your own.
And that means it's not a standard Shadow anyway. So my guess is: it's a tiny Shadow.
I'd say yes. it's not a polymorph effect so you can have them both running, and small mephit, small shadow.

Bonus question: I'm an 8th level Kitsune Sorcerer with the Psychic Bloodline. I can cast my spells in Fox Form, since they only require emotion components.

Absolutely! That is, in fact, the best kind of shadow.
