Strix with the oread or talos versatile heritage could be flavorful, maybe as a kinetecist or mutagenist alchemist with the right mutagens. Or if you've played enough of the Starfinder 2E playtest games before the cutoff date, get yourself a Dragonkin with the oread/talos versatile heritage, too?
But aren't Dragonkin a Starfinder only race? This is for PFS

Galaxy Guide is the first Starfinder 2e book out, ahead of the core book by a couple months.

I made him an Orc with Dragonkin heritage and just say he's a gargoyle since flavor is free?
Strix will be free now? Did some event happen in PFS to make Strix less rare?
I wasn't at the panel where it was announced, but This article summarizes the anouncements. The impending war between Cheliax and Andoran has disrupted the Strix's isolation in Cheliax, and led to them becoming more prominent in the Inner Sea. I anticipate the formal announcement coming later this week, as the Organized Play team had two conventions back to back, so some there's some administrative stuff piling up.
You can find the rules for Dragonkin on Demiplane. There are still two months in the playtest period if you want to try and unlock them.
