I'm still pretty new to Pathfinder & DnD, having only built like two classes on Pathfinder. Anywho, the race is going to be a Ratfolk of course, but I'm not sure on what class to grab.
At first, I was considering Two-Weapon Fighter and building something off of that, maybe going with Scurrying Swarmer if my party has two frontliners. Since two-weapon fighting was going to be crucial, I made sure to grab those feats but I'm not sure what else to get to actually do some damage since ratfolk get a -2 to str.
I'll take any suggestions or advice from anyone at this point.

for TWF, you'll want to pump Dexterity. Unchained Rogue is a good choice as it gets Dex to damage. Aside from that, you'll want to look into Weapon Finesse, Pirhana Strike, and Haste items. The key to TWF builds is lots of attacks that do a little damage each. putting an enhancement like Flaming on your weapons is good, and doing a Sneak attack build is good as well. it's not too difficult to be getting 4 or 5 attacks each round, each doing 5d6 or more damage.
Daggers are a great choice for weapons, but if you want to go larger, be sure to look at Effortless Lace.

I was not familiar with Queek Headtaker so did some research. Based on what I read I think an unchained barbarian may be a better choice than unchained rogue.
The Unchained Barbarians rage does not boost his stats it gives a flat bonus to attack and damage. Which means it is not reduced when wielding two weapons. You will also be able to pick up rage powers to boost your combat Taking powerful stance will give you another boost to damage. Since neither Ratfolk nor Unchained Barbarian gets extra feats, you will not be able to get both weapon finesse and two weapon fighting until 3rd level. After that you should be fine. I would recommend swapping out Swarming for Cornered Fury.
You should be able to get a STR of 12 (after racial) without too much difficulty and still focus on DEX. You will want at least 14 CON.

More flavor-oriented choices would be to still go strength and use ranger or slayer combat style feats for two-weapon fighting. Maybe grab rage and/or mutagen dips for the strength boosts to make sure you are the strongest skaven.
Double-slice gives full STR damage on off-hand attacks.
Ranger gives you favored enemy, so you can play up Queek's grudges. Alternatively, slayer gives studied targets and sneak attack, while still giving full BAB.
Suggest (eventually) using a magic, dwarf-bane morningstar in main hand flavored as your spiked maul, dwarf-gouger. However, piranha strike would have to be replaced by power attack.
[Edit] If you have sneak attack, keep swarming to take scurrying swarmer feat, otherwise follow Mysterious Stranger's suggestion to swap for cornered fury

The problem with a STR based build is that Ratfolk have a racial penalty to STR, and the damage is halved for the offhand weapon. Double slice will take care of the STR bonus for the offhand weapon but the bonus from power attack would still be less.
With Unchained Rage the bonus is not cut, nor would the bonus for Powerful Stance. Both of those give a scaling bonus that goes up as the character levels. Both Favored Enemy and Sneak attack are situational bonuses that will often not apply. While unchained rage is a limited resource it can be used anytime the character is in melee combat or with thrown weapons.

All very fair points! And why I prefaced the suggestions as flavor-oriented. Overcoming a racial penalty isn't all that uncommon when ignoring min-max builds. Favored enemy is again flavored for a character known for grudges, and the sneak attack is much more reliable for a ratfolk (pseudo-skaven) using scurrying swarmer, assuming there is another melee character in the party. Slayer talents help build TWF feats faster, as barbarian rage powers just don't help that build much.
But I will add, Unchained barbarian is good for another reason: much simpler than the original. OP notes that they are new to PF, so whether as straight class or dip, unchained is easier to math. And beast totem chain into pounce is always lovely.

I appreciate the feedback and suggestions! I'll make sure to try out all of the suggestions (which were much appreciated) and see what works best. Until then, I will still look at and take any advice people offer.
