Kinda surprised this isn't a question that has been asked for even clarification (that I kind find at least) but does the paladin just get an increased channel dice over their lay on hands at odd levels 5+? It seems weird that they do but I can't see anything saying that the previous sentence isn't the RAW.

Not sure exactly what you are asking. Are you asking how much healing/damage a paladin's channel does?
A paladin uses her level as her effective cleric level when channeling positive energy.
The amount of damage dealt or healed is equal to 1d6 points of damage plus 1d6 points of damage for every two cleric levels beyond 1st (2d6 at 3rd, 3d6 at 5th, and so on).
Yes, a 5th-level paladin LoH is 2d6 healing and a 5th-level paladin channel is 3d6. But it takes two uses of LoH to channel.

While Channel energy heals more at odd levels, lay on hands has some big advantages. First and most importantly a paladin can use it on himself as a swift action. This allows the paladin to heal himself while still getting a full attack. Second Lay on hands which provide additional benefits to those healed. When using lay on hands the target receives the benefit from all their mercies. At High level a paladin can remove several conditions. When used on himself this makes it incredibly hard to hinder a paladin. Unlike almost any other form of healing Lay on Hands is actually good for using in combat.
Channel Energy on the other hand can heal massive numbers of targets. I think you can fit about 90 targets in the area of channel energy.
