Super spoiler question about how willowshore works:

In the mindscape that is Willowshore, do traders other than Shinzo show up to trade with willowshore? In other words, do. . . ‘Memories’ or traders or psychic simulacra show up to trade with willowshore? If yes, then getting enough food doesn’t seem like a problem. If no, then it seems like a small town of 220 (many of which die in the opening attack), could continue to pay the PCs a bunch of gold for level 10 earn income tasks and spend money at their tea house, I don’t think the town’s (mindscape) coffers run that deep.
Just trying to understand what is going on.

Nope. In the adventure, Willowshore is cut off. There's no visitors other than Shinzo from outside the area, and that lack of trade is the primary reason why the PCs have to help pitch in and organize for the coming winter's food, security, and all that; they have to be 100% self-sufficient.

Whether or not the town can pay the PCs for Earn Income is left to the GM to determine, but certainly the PCs are increasingly the ones in town who folks WILL try to support and pay. And in fact, the town has nothing else to spend money on since there's no traders coming through, so in a way, the PCs are the ONLY thing that's the town's coffers are being used to pay folks.

That said, not all payment has to be given in coins. The PCs could be paid in goods and services of equal amount, or even in "good karma" that you can track as a "karma point = 1 GP" and then whenever Shinzo comes along, Shinzo sees how much good the PCs are doing for the townsfolk and grant them credit in his store so they can use karma points as gp to buy stuff.

As for the initial deaths in book 1, the idea is that the population figure listed in Willowshore's stat block is POST that event. If the PCs fail significantly and an unexpectedly large number of citizens die, then feel free to adjust that population figure, but as written, if the PCs complete chapters 1 and 2 of the first book, then Willowshore's living population should "start" at the value listed in its stat block.
