I downloaded the starter bundle and the beginner's box and am a little disappointed with the digital resources. The character sheet with the beginners box is not fillable, and is locked within acrobat so I cannot prepare the form to make it fillable. With digital VTTs becoming more and more prevalent, I was hoping there would be more resources for online play.
I know there are resources like Roll20 and others for making a character sheet, and maybe I'm new so I don't know the best answers for a digital character sheet, but I at least would like to be able to edit the PDF I purchased.

If I may suggest, if you're playing Pathfinder 2e check out Pathbuilder2e.com. It's a cheap resource for the full version ($5, one time purchase) or free for 90% of the functionality.
It guides you through the character creation process, giving you the options you can pick from. Once your character is created, you can either generate a .pdf character sheet that's already filled out, or if you buy the full version export it as a .json file that can be loaded directly into Foundry, as I understand.
I keep hoping Paizo will buy out the creator of the Path Builder website and keep him employed to manage it in their name...it makes life so easy for anyone trying to play Pathfinder 2e.

TL;DR - The sheet you want can be found here:
https://paizo.s3-us-west-2.amazonaws.com/PZO2106_UpdatedCharacterSheet.pdf
Here is the longer, more ranty version: I can help with the PDFs themselves as Paizo *does* have free Beginner Box PDFs which don't have any document security via permissions, so you're free to edit it and make it fillable and whatever else.
I don't blame you for not finding it, Paizo's site is pretty 1999 most of the time, so to get to the sheets you'd have had to click on Pathfinder, Beginner Box, scroll to the bottom of the page, click a link which isn't obviously a link titled "Additional Resources" then scroll *back up* because the page changes are not visible from where you are on most monitors ::eyeroll:: and *then* you'd see a link called "Download the Pathfinder Beginner Box Character Sheets (308 kB zip/PDF)"
I'll link it here, I don't know if Paizo allows links here, but here goes:

PS: Dear Paizo, I love your game, but your website is beyond terrible, you folks really need to take some of that 5e OGL cash and sink it into the site, I can tell you with no hesitation you're losing sales due to the obtuse way things are purchased and downloaded. The forums are also very backward, who still has it where you can't edit or delete a post after an hour? You do! Come on, for such a great game with such passionate devs it seems like your website and ecommerce folks threw in the towel around 2002.
PPS: Whoever was up a few posts suggesting OP pay $5 for Pathbuilder, that's just low. Shame on you. Poor OP just wants a free sheet and somebody tries to tell them something..
