I'm looking to get and run Kingmaker soon however I don't yet own all of the bestiaries. Can someone clarify if I need all 3 to run this adventure path?

Kingmaker uses monsters from Bestiary 1 and Bestiary 2, with one exception found in the Companion Guide...
I may be forgetting one or two, but for the most part, Bestiary 1 and 2 will cover your needs (since at the time development on Kingmaker was taking place, Bestiary 3 wasn't yet even being written, I didn't pull creatures from that book... but the monster mix in Bestiary 2 was very much informed by what monsters would be in that Adventure Path).

I just started putting a game together and came across one of the NPC's, Ioseph Sellemius who's listed as an male human Aristocrat 5. That's not in the book, or anything else, but reading the little I have about him, I went with the Advisor from the Game Mastery Guide. Same CR of 5, so I really don't think that it's a massive change. You might want to think about potentially looking at other options for some roles listed in the book that aren't actually found.

Ioseph never appears in any capacity where his stats matter unless you add it. There are plenty of named npcs in this and ither AP's where they just give a Name, Ancestry level and Class/Profession. This is just for world building mostly. If you did want to put them in an encounter than that would guve you enough info to fudge it or use a different close statblock.
Ioseph only appears in chapter one to make a speech and than never again. In the final parts of the game there is a monster who can pretend to be him but still doesn't use his stats.
If the AP doesn't give a book and page number for the stats of a monster or npc then they aren't needed.
