We'll go with yes, though I haven't an idea what you mean by that (there are a LOT of bosses). But I was a good little explorer and stomped across (and was stomped across) every dungeon and area I could find. Only exception is I gave up trying to beat the second Astel as that fight was just stupid. And I apparently missed a dragon highlord or something in Farum Azula.
I ended up with the Age of Stars ending.

By field bosses I mean pretty much everyone that isn't a dragon or demigod. Like all 9 Night's Cavalry, the Magma Drakes, and so on. Yeah, there's a dragon in Farum. I couldn't beat him, so don't feel bad. I also left the last 2 Night's Cavalry unkilled because I can't find that carriage in the snowstorm of Consecrated Snowfields. Didn't get the last Death Rite Bird (it kept managing to get lucky) in the Snowfields. I did kill the second Astel though. Yet I still managed to miss some easy loot like the Jellyfish shield. Congrats on your victory!
Now on to NG+ lol

Yeah, I missed at least two archery talismans my first time.
I only took out a few night cavalry, and didn't even try with that death bird. I actually defeated that caravan in the day time and found it pretty easy to take out on horseback. I got the jellyfish shield but I never really used it.
I mostly used Bloodhound Fang, Darkmoon great sword, and the black knife (which is what I used in the last few fights).
I found the Sword of Night and Flame to be extremely overrated.
In NG+ I'm mostly using the flail I got from Astel and trying out the sword I got from Radagon. Though I still pull out Bloodhound Fang every now and again.
I also didn't waste time in the last hero's grave, the one with the 3 death chariots.

I'm not even sure I found that SoG honestly and I also got tired of fighting Night's Cavalry.
Last hero's grave: take a shackle in (Mohg or Margit). There you can use it to cause all 3 chariots to crash. It does work, done it on both playthroughs.
Used my basic twinblade till late game, though I tried a few other weapons early including my old reliable Morningstar. Then I got a Great Star and my, Alabaster Lords, Onyx Lords, and most knights hate me. Then for sheer silliness I went with whichever other twinblade I had to hand, usually bleeding enemies a lot. I did get lots of use from my longbow and a few other bows...then I got my Golem Greatbow to +10.
NG+: I still use my GG+10 to do rude things to enemies. I'm building up a second Great Stars, another Twinblade, a couple shields...I need to get that sword from the Elden Beast up to snuff. I switch my Spirit Ashes between the Mimic Tear and Tiche and I have very basic incantations available. Mostly I'm reminding enemies that they aren't all that. Exploring Mt Gelmir again, Altus Plateau too. Going to go back to Sellia and clean house, and I need to go to Deeproot Depths too. I'm skipping a few bosses this time, like most Erdtree Avatars, as I don't need what they got.
Feels good to just mangle a Magma Drake with my Mimic Tear. I also got to do the Jarburg stuff right this time.

Fun fact: at work on the job site, if I can't find a tool or something else I need I say in my best Mister Krabs voice "Ah! Where's me giant rusty anchor?!!"
So the first time I defeated that boss and found the rusty anchor I immediately equipped it, took a picture, and sent it to everyone I ever worked with, with the caption "I found me giant rusty anchor!!".

Borealis? The fog is a problem. I moved around a lot on Torrent. Fight ended on an island. Not too bad other than frostbite. By the time you can fight him, you should be used to dragons.
I cheesed Glintstone Dragon Azula by staying in the cathedral last night and shooting her full of rotbone arrows. I regret nothing.

I just defeated the fire giant (in NG+) without cheesing him with Latenna. Mostly because I accidentally summoned my Jellyfish and decided to roll with it and see how long until I died.
Basically I rolled around hitting him in the ankles while the jellyfish distracted him and then in phase two I pretty much just unleashed Ranni's Darkmoon on him which would stun him and then I could run up and stab him in the chest eyeball and then roll away and repeat it a few times. Still almost died though!

I will however cheese Commander Niall every time though, I absolutely hate fighting that guy (or rather I hate fighting his entourage).
I'm with you there. I'll cheese him when I get back to him. I'm gearing up to go through Leyndell. Well, actually, tore it up and I'm about to go teach the shade and the Omen King a few things.

The knight guarding the prothesis to give to Millicent was stress inducing. I ended up loading myself with poison arrows and plinking away for a long time.
Plus Revenants. Dern teleporters, it actually got up on a ledge with me.

No such problem for me. Though I know I pulled the 'I died by my enemy but my spirit ash got him' stunt along the way.
Most recent lesson: why the Fallingstar Beasts are a pain. There's no point to having vulnerabilities on a monster that just charges around running you over with its various attacks since you won't get a chance to hit them.I doubt I'll have a rematch with the Full Grown version, not worth my time.
Also, I got the Bull-Goat armor this playthrough so it's time to grind and bump my Endurance up enough to use all of it. I'm tired of the sombrero from Lionel's set. Or the fact I look like a barrel.

Crucible Knights are the worst! I either do what you do, especially with the one in Farum Azula, or I chug my wondrous physic and nuke them with Azur's Comet.

I second the notion on Crucible Knights. I don't like lots of knights due to their high poise, but they're the top of the heap. Died to one down in the underground on this playthrough when it just wouldn't go down as I kept hitting it. And yet, I'll probably keep killing them. I'm skipping the Bell Bearing Hunters though.

Funny story, I absolutely got destroyed every time I fought the Bell Bearing hunters, finally I defeated the one by the shack in Altus after an extremely hard fought and lucky battle and thought "well, I'm glad that's over!" A couple of days later I went to the shack in Caelid at night, thinking everything was cool. Next thing I know I'm getting absolutely destroyed again. Now I avoid all shacks at night, and the Church of Vows.

I get the hubris thing, though sometimes it's still just BS. Made it to Mountaintops of the Giants and I'm in the catacombs with the watchdogs. I've shot one a bunch with my trusty Golem Greatbow +10. Should need about 600 damage. I died as I kept hitting it with my off-hand twinblade and it just would not drop.
When I got my runes back, I made sure to put extra arrows in it.

Sounds like you were exploring Leyndell (where the bow is), then found the Leyndell Catacombs beneath Leyndell and the Subterranean Spawning Grounds. Omens can be easy or a real pain. The boss of the Leyndell Catacombs is a pushover. He's pretty much an invader he's so weak.
Not the subterranean shunning grounds, this catacombs was more towards Gelmir.

Unsightly Catacombs? Omen in there. Cliffbottom in Liurnia? Not many places share those two critters, Imps and Omens. Auriza Hero's Grave is all the way in the wrong direction.
For my part, I went and put down the Dragonkin Soldier in the Lade of Rot. Would've left him alone but I wanted the runes to level up. I can now wear all of Bull-Goat's gear. Had to bring up the last platforms though, as my last trip I didn't bother setting up to take him out. Now I'm about to deal with Commander Niall in Castle Sol after many rounds of grief from the Banished Knights. Though watching one try to teleport up to me and then fall repeatedly was comedic. Still gotta knock that mausoleum down too. The things we do to get to the Snowfields....

That sounds right, I just "defeated" the good commander last night, still have to make my way through the actual castle though.

This is the video I used, still works!
Although I've found it works best if you don't get a running start and just stand on the edge and then jump, and then at the very last second double jump, and then swinging a light sword or dagger the whole way down (it'll take a few minutes).

This reminds me of a place in Volcano manor that is a bit difficult to describe. The room overlooks the lava lake where the iron maiden roams and there are snake heads arching out over the lake. The usual way I enter is up a ladder and through a window. I THINK there is a small set of stairs directly across from the window that is guarded by a snake person that leads to a locked door that opens from the other side. I have never found out how to open it. Anyone know where I am talking about?

I do, but it's been so long and I think I did it after a snow run so I was probably sleep deprived so I can't say exactly how or if I got through the door (it might be tied to what's her face's quest).
I'll probably go stomping around Volcano Manor at some point this week I'll let you know what I find if you haven't figured it out yet.
