Honest mistake, they can select a different human or elf heritage.
They lose the free dedication, which they can "re-take" at 2nd level.
They lose other feats that no longer fit.
They can only exchange things that directly relate to the taking ancient elf heritage.
If they are unable to make these changes in time for the game, they can play a pregen.

Personally, I would. I could see the Heritage being more important, either mechanically or flavorfully, than the Ancestry.
The PFS1 Guide covered handling these sorts of errors (and there's still a Stickied post in this Forum as well), but I can't find anything in the PFS2 Guide.
Did the player build the character when Ancient Half-Elves were still legal? Or after the Errata?

I agree, we don't punish people for honest mistakes, but we do fix them.
I'd be okay with any of the following:
- Change to fullblood ancient elf and keep the dedication
- Stay half-elf or become full-blood human, change ancestry feat to something else, and change level 2 class feat to keep the dedication.
- Stay half-elf or become full-blood human, and change the ancestry feat (losing the dedication)
They're all minimal changes that are sufficient to become compliant with the rules.
