I would like to suggest that official product PDFs naming includes the product name instead of just the product code. It is much easier to find a PDF when it has the full name. For example, I just downloaded the Advanced Player's Guide. It has a name - PZO2105E.pdf. Instead it would be helpful to have it named Advanced_Players_Guide_PZO2105E.pdf.

Once you've downloaded it, you can rename it anything you like.

Exactly, and since everyone's preferences on naming will vary, it's easier just to keep it as the product number. For instance, when I download my subs, I would name that PZO2105E-Advanced Players Guide.pdf because I prefer them kept in the publication order

You can of course, but if you download a bunch of them at once it's a pain to have to open each one to find out what it is and rename it. It's a minor irritation, but it has long been an irritation.
Why use a code that's meaningless to the customer? What's the point?

People have a lot of different naming and filing schemes for digital products. I'm pretty sure that my abbreviations and codes wouldn't be completely suitable for most people.
Paizo needs the product number. Beyond that, there's very little chance that they could come up with a naming scheme that everyone found suitable and useful (not too long, not too short, includes date of publication, includes code for AP and volume, adventure, scenario, accessory, which spell card and which tradition, etc etc)
Any naming scheme would suit a few people, enrage a few people, and leave the rest of us having to rename the file just like we do now.

They give sensible names to the zip files. They might not be exactly what you'd want. They're not what I'd want. They are at least identifiable. You would have some idea which one it is, if you don't rename it to your own complex scheme immediately.
I've never seen another company use their internal product codes for downloaded files.
