According to the rules on Polymorph there is one paragraph that caught me off-guard and it has to be missing text I assume.
"If a polymorph spell causes you to change size, apply the size modifiers appropriately, changing your armor class, attack bonus, Combat Maneuver Bonus, and Stealth skill modifiers. Your ability scores are not modified by this change unless noted by the spell."
Why isn't Combat Maneuver Defense listed? And why isn't Fly listed?
Looking at the Creature Sizes chart there are specific entries for Size Modifiers that affect attacks and armor class, Fly and Stealth checks. A Special Size Modifier that affects CMB and CMD. Plus specific Size Modifiers to Fly and Stealth which I assume are tacked on in addition to the first Size Modifier.
Fly shouldn't be directly impacted as it's modifier is based on Maneuverability (clumsy, poor, etc.), unless you're referring to the check penalty vs being blown away by strong winds. That penalty only applies when making a check vs strong winds so that's probably why it isnt listed.
As for CMD, it seems intended that it would change along with CMB.

Well both Fly and Stealth have modifiers to the skill based on size. It's listed on the Creature Sizes chart.
It's just odd that the first entry, Size Modifier, has a superscript saying, "A different size modifier applies to Fly and Stealth skill checks a creature makes." They don't need to point that out because the chart has a specific modifier for both Fly and Stealth.
Since that chart has a specific entry, Special Size Modifier, which directly affects CMB and CMD, the fact that the Polymorph size explanation ignores including CMD when it obviously should. Not to mention that the Polymorph also specifically lists Stealth and not Fly, which it also should.
I get that at this point, with PF2 out, rules from PF1 don't need to many clarifications anymore but I thought it was funny that it hasn't been mentioned before.
